===== Chicken Tenders with Broccoli Slaw ===== \\ [[Chicken]]\\ Prep Time: 20 minutes\\ Cook Time: 20 minutes\\ Serves: 4\\ Ingredients: * 1 pkg (340 g) broccoli slaw * ~1 kg boneless skinless chicken breasts * 4 cloves garlic * 1 lemon * 2 oranges * 55 g parmesan cheese * black pepper * 8 tbsp dijon mustard * 4 tbsp olive oil * 7 tbsp honey * 1 cup panko bread crumbs * 1/4 tsp paprika * 3/4 tsp salt * 1/2 tsp black pepper Steps: - Preheat oven to 450°F. Using a paper towel, lightly coat a large baking dish with oil. - Grate 1/2 a cup of parmesan cheese. In a medium bowl, mix together parmesan, bread crumbs, salt, pepper, and paprika. * 1 cup bread crumbs * 1/2 tsp salt * 1/4 tsp black pepper * 1/4 tsp paprika - In a small bowl mix together dijon mustard, honey, and oil. * 4 tbsp dijon mustard * 3 tbsp honey * 1 tbsp olive oil - Slice chicken in half horizontally to form thin fillets. Cut each fillet into strips. - One by one dip the chicken strips in the mustard mixture, then coat in the bread crumb mixture and place on a baking dish. - Place in the oven and bake, turning over halfway through, until tenders are golden brown, 15-20 minutes. - Peel and mince the garlic. In a small bowl prepare sauce by mixing together half of the garlic (save the rest for the slaw), dijon mustard, and honey. * 2 cloves garlic, minced * 4 tbsp dijon mustard * 4 tbsp honey - In a large bowl prepare dressing by whisking together remaining minced garlic, lemon juice, oil, salt, and pepper. * 1 lemon * 3 tbsp olive oil * 1/4 tsp salt * 1/4 tsp black pepper - Add broccoli slaw to bowl with dressing.
