===== Jambalaya ===== {{jambalaya.jpg}}\\ [[Pork]]\\ Prep Time: 20 minutes\\ Cook Time: 6.5 hours\\ Serves: 4\\ Ingredients: * 1 lb hot or mild Italian sausage, casing removed * 1 onion, diced * 2 cloves garlic, minced * 1 red chilli or jalapeno (optional) * 2 tsp Cajun seasoning * 1 tsp dried oregano * 1 tsp salt * 1/2 tsp black pepper * 1 cup barley * 1 28oz can diced tomatoes including juice * 3 cups chicken broth * 8 oz medium shrimp, cooked, peeled, and deveined * 1 roasted red pepper, diced Steps: - Brown the sausage meat in a pan and transfer into slow cooker. - Add diced onion to the pan and cook until softened, then add garlic, chilli or jalapeno, cajun seasoning, oregano salt, and pepper and continue to cook for 1 minute then pour into the slow cooker. - Add the can of tomatoes, chicken stock, roasted pepper, and barley to the slow cooker. - Cook on low for 6 hours, then add the shrimp. - Wait until shrimp are heated, then serve. {{tag>pork fish slow_cooker}}
