===== Korean-Style Beef Rice Bowl with Cucumbers ===== \\ [[Beef]]\\ Prep Time: 15 minutes\\ Cook Time: 20 minutes\\ Serves: 4\\ Ingredients: * 1 cucumbers (2 is too many) * 2 cloves garlic * 2 (2 1/2 cm) pieces ginger root * 1 small bunch green onions * 1 cup rice * 0.68 kg lean ground beef * 1/4 tsp crushed red pepper * 4 tsp honey * 2 tbsp rice vinegar * 4 tbsp soy sauce * 1 tsp toasted sesame oil Steps: - Using a strainer, rinse the rice under cold water. Drain and transfer to sauce pan. Add water and pinch of salt. Bring to a boil over high heat. Turn down to low, cover, and cook for 15 minutes - Wash and dry cucumber and green onions - In a large salad bowl, combine and whisk together rice vinegar, honey, and crushed red pepper - 2 tbsp rice vinegar - 2 tsp liquid honey - 1/4 tsp crushed red pepper - Trim and discard ends of cucumbers. Slice cucumber into thin rounds. Add to the salad bowl and toss - Peel and grate ginger and transfer to a small bowl - Peel and mince garlic and add to bowl with ginger - Add soy sauce, sesame oil, and honey to bowl with ginger and garlic - 4 tbsp soy sauce - 1 tsp toasted sesame oil - 2 tsp honey - Preheat pan over medium-high heat - Trim off and discard ends of the green onion. Cut green onion into small pieces (I like to use kitchen scissors for this). Transfer to a small bowl - Once the pan is hot, add the ground beef and cook, breaking apart until brown and crumbly, 3-4 minutes - Add the soy sauce mixture and 3/4 of the green onion to the pan, and stir to combine for 2 minutes - Once rice is done cooking, uncover and fluff with a fork - Create a bed of rice in the bowls, add cucumbers and beef, garnish with remaining green onions and sesame seeds {{tag>[beef rice cucumber bowl]}}
