===== Lemon Potatoes =====

Serves: 4\\ 

Ingredients:
  * 4 lbs potatoes, peeled
  * 1 cup water
  * 1/2 cup lemon juice (fresh squeezes is best)
  * 1/3 cup olive oil
  * 3 cloves garlic, minced
  * 2 tsp salt
  * 2 tsp oregano
  * 1 tsp ground black pepper

Steps:
  - Preheat oven to 325F
  - Peel potatoes and cut length wise into thick wedges
  - Place potatoes into a pan
  - Whisk together remaining ingredients and pour over potatoes
  - Stir potatoes to coat evenly
  - Place into oven. Stir potatoes regularly to keep moistened. Cook for approx 2 hours until tender and most of the juice is evaporated.
