===== One Pan Mexican Quinoa ===== {{mexican_quinoa.jpg}} \\ [[Vegetarian]]\\ Prep Time: 5 minutes\\ Cook Time: 35 minutes\\ Serves: 4\\ Ingredients: * 1/2 small red onion, diced * 3 cloves garlic, minced * 2 bell peppers, diced * 1 1/2 cups quinoa (uncooked) * 2 cups vegetable broth * 3 cups canned diced tomatoes * 1 15 oz can black beans * 2 cups frozen corn * 1 tbsp paprika * 1/2 tbsp cumin * 1 lime, juiced * 2 green onions * 1 cup fresh parsley * salt * black pepper * red pepper flakes * 1 avocado Steps: - Wash and cut the bell peppers. Peel and dice the onion. Peel and mince the garlic cloves. - Heat some oil in a large pot and saute the onion for 5 minutes or until it becomes translucent. - Add garlic and bell pepper and cook for another 2 minutes on high heat. - Add the rest of the ingredients except for the lime juice, green onions, and parsley. - Cover with a lid and simmer for 30-35 minutes until the quinoa is cooked. As the temperature varies a bit, make sure to check once in a while that your quinoa is not burning or sticking to the bottom of the pan by stirring occasionally. - Stir in the lime juice, green onions, parsley, and season with salt, pepper, and red pepper flake to taste.
