Preheat oven to 425ºF
Pour flourin a shallow bowl and mix in salt and pepper to taste
Mix 3 eggs with a tablespoon of water in a second shallow bowl
Mix together the panko and plain bread crumbs in a third shallow bowl
Pour sweet chili garlic sauce into a fourth bowl
Cut the chicken into cubes about 1/2“ in size. Flip the chicken pieces in the flour until lightly coated. Dip the coated chicken into the egg mixture and coat all over. Allow excess egg to drip off before putting into the bread crumb bowl, pressing gently to allow the crumbs to adhere. Dip the chicken in the sauce and then shake off excess, setting the completed pieces on a lightly oiled baking tray (lined with aluminum foil or parchment paper if desired)
Sprinkle all of the pieces with sesame seeds
Bake in the oven for 16-18 minutes, tossing halfway through.
