Bring a large pot of salted water to a boil. Add pasta and cook
Dice the onion and slice the sausage into thin rounds
Heat a skillet over medium-high heat and add olive oil and chorizo. Fry until it starts to get crispy, around 7 minutes
Add the diced onion and cook until softened, around 5 minutes
Stir in the garlic, tomatoes, and cream. Let the sauce cook for 5 minutes or until reduced as desired. Season with salt and pepper to taste
Toss with the pasta and serve with grated parmesan cheese
