Serves: 4
Ingredients:
2 tbsp olive oil
1 package turkey sausage, sliced
1 yellow onion, diced
1 green bell pepper, diced
salt
pepper
2 cloves garlic, minced
1 1/2 cups vegetable broth
1 1/2 cups rice
parsley
Steps:
Heat a skillet over medium heat. Slice the sausage into rounds.
Once hot add olive oil and sausage. Cook for 5 minutes or until browned. Use a slotted spoon to remove the sausage from the skillet and set aside.
Add diced onion and green pepper to the hot skillet. Season with salt and pepper to taste and cook for 4 minutes stirring occasionally
Add garlic and continue to cook for 1 minute
Pour in vegetable broth and bring to a boil
Stir in rice and sausage
Turn down heat to low and cover with lid, leave to simmer until rice is cooked
Garnish with parsley
