Thai Peanut Chicken Wraps

Ingredients:

Steps:

  1. Heat skillet over medium-high heat.
  2. Slice chicken in half horizontally to form thin fillets. Season with salt and pepper to taste.
  3. Coat bottom of skillet with oil. Add broccoli slaw and cook until tender, 2-3 minutes. Transfer to a bowl.
  4. Peel and mince garlic and ginger.
  5. Return skillet to stove and add oil. Add chicken and cook until cooked through, 2-3 minutes per side.
  6. In a small bowl, prepare sauce by whisking together the minced garlic and ginger, peanut butter, honey, soy sauce, and water.
    • 4 tbsp natural peanut butter
    • 2 tbsp honey
    • 2 tbsp soy sauce
    • 2 tbsp water
  7. Roughly chop peanuts
  8. Add peanuts and sauce to bowl with broccoli and toss to coat.
  9. Wash and dry bell peppers. Seed and slice into thin strips.
  10. Thinly slice chicken into strips.
  11. Heat skillet over medium heat.
  12. Divide broccoli slaw, bell peppers, and chicken among the tortillas. Roll up tightly and brown in skillet.
