Creamy Corn Pasta Salad


Vegetarian
Prep Time: 20 minutes
Cook Time: 10 minutes
Serves: 4

Ingredients:

  • Chives
  • 100g crumbled feta cheese
  • 2 english cucumbers
  • fresh basil
  • 4 cups frozen corn
  • 1 lemon
  • 280g rotini pasta
  • 1/4 tsp black pepper
  • 1/2 cup mayonnaise
  • 1 tsp salt

Steps:

  1. Fill a large pot with water, cover, and bring to a boil. Add a palm of salt and the pasta. Cook until desired firmness, approximately 8 minutes.
  2. Wash and dry fresh produce.
  3. Juice lemon into a large salad bowl.
  4. Add mayonnaise, feta cheese, salt, and pepper to the salad bowl and stir to combine the dressing.
  5. Trim and small dice cucumbers. Add to salad bowl.
  6. Pick basil leaves from stems, roll up crosswise and thinly slice into ribbons. Add to salad bowl.
  7. Chop chives into small pieces, add to the bowl.
  8. Add frozen corn to the pot of boiling pasta when there's 3 minutes left of cooking.
  9. When corn and pasta are done cooking, drain and rinse under cold water. Let sit to dry then add to the salad bowl.
  10. Toss salad to mix and combine ingredients and dressing.
