Shrimp Pesto Pasta

Serves: 4

Ingredients:

  • 2 cups fresh basil leaves
  • 1/2 cup olive oil
  • 3 cloves garlic
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup parmesan cheese
  • pasta of choice
  • de-veined, de-shelled shrimp
  • 1/3 cup pine nuts
  • 1 tsp butter

Steps:

  1. Start a pot of water to boil. Add a pinch of salt and splash of olive oil.
  2. Add basil, olive oil, salt, pepper, pine nuts, salt, pepper, and cheese to a blender. Blend thoroughly.
  3. Once water is boiling, add the pasta and cook until desired doneness.
  4. Heat a frying pan to cook the shrimp about 4-5 minutes. Do not over cook.
  5. Drain water from shrimp pan. Add butter and 1/4 tsp salt to the shrimp.
  6. Save 1/4 cup of the pasta water, then drain the pasta.
  7. Add the 1/4 cup of pasta water to the pesto sauce and mix again.
  8. Divide pasta among the bowls, add shrimp, sauce, and top with grated parmesan cheese.
