Serves: 4

Ingredients:

  • 1 lb hot or mild Italian sausage, casing removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red chilli or jalapeno (optional)
  • 2 tsp Cajun seasoning
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup barley
  • 1 28oz can diced tomatoes including juice
  • 3 cups chicken broth
  • 8 oz medium shrimp, cooked, peeled, and deveined
  • 1 roasted red pepper, diced

Steps:

  1. Brown the sausage meat in a pan and transfer into slow cooker.
  2. Add diced onion to the pan and cook until softened, then add garlic, chilli or jalapeno, cajun seasoning, oregano salt, and pepper and continue to cook for 1 minute then pour into the slow cooker.
  3. Add the can of tomatoes, chicken stock, roasted pepper, and barley to the slow cooker.
  4. Cook on low for 6 hours, then add the shrimp.
  5. Wait until shrimp are heated, then serve.
