Ingredients: 2 chicken boneless skinless chicken breasts; 1 stalk lemongrass; 4 garlic cloves; 2 tbsp lime juice; 2 tbsp fish sauce; 3 tbsp soy sauce; 2 tbsp brown sugar; 1 tbsp vegetable oil; choice of noodles (I used glass noodles / mung bean vermicelli); half a head of iceburg lettuce; 2 medium carrots; 1 cucumber; 1 bunch of fresh mint; 1 bunch of fresh cilantro; 1 tbsp + 1 tsp toasted sesame oil; 1/4 tsp salt; rice paper sheets; 1/3 cup all natural peanut butter (smooth); 2 tbsp rice vinegar; 2 tbsp honey; water
